Easy Vietnamese Spring Rolls with Video Tutorial

Today we take a culinary trip to Vietnam via fresh and refreshing spring rolls, a great snack for a hot summer day by the pool. My version nixes the rice noodles on the inside (I personally don't like adding more rice noddles inside of rice paper) and adds bulk with lettuce. I take a shortcut and incorporate shredded carrots into the lettuce mix and toss it with lime for a fresh citrus punch. Serve the spring rolls with a side of peanut sauce or soy sauce for the perfect summer snack.

Ingredients

*Makes Approximately 16 Rolls
16 Rice Paper Sheets
1 Head of Butter, Loose Leaf, or Romaine Lettuce
6 Carrots
2 Green Onion Stalks
1 Cilantro Bunch
2 Cucumbers
1 Bell Pepper
1 Lime, Juice 

Method

  1. Chop the lettuce and green onions and grate the carrots. Put in a large bowl with lime juice and mix to combine. Set aside.
  2. Cut cucumbers and bell peppers into strips. Set aside. 
  3. Chop cilantro. Set aside. 
  4. Fill a plate with lukewarm water. Soak a sheet of rice paper in the water, turning it over several times until it becomes translucent and soft enough to fold. 
  5. Spread rice paper on a dry surface and fill with lettuce and carrot mix, cucumber, bell pepper, and cilantro. 
  6. Roll rice paper once to cover the fillings then fold the sides in, and continue rolling to close the spring roll.
  7. Repeat steps 4-6 until you run out of vegetables. 
  8. Enjoy with soy sauce or peanut sauce!
