A Better, Prettier Margarita at Del Sur

Margaritas are done by many, but perfected by few. 

At Del Sur in San Diego, lead bartender Sabrina gave us the inside scoop of how to make a perfect prickly pear margarita. It starts with a generous pour of blanco tequila, two ounces to be exact, followed by a house made prickly pear puree and lime agave mix made fresh everyday, then a touch of triple sec for a little extra sweetness. It's shaken to perfection and the glass is rimmed with black charcoal salt creating a beautiful visual contrast with the pink/purple drink.

Wonderful co-owner Kate provided us with an array gluten free and vegetarian options to enjoy with our drinks.

​ My favorite item was the jackfruit taco. I've had jackfruit tacos before, but they failed miserably to satisfy my taste buds or hunger. Del Sur nailed it with the seasoning and texture. I found myself reaching for the jackfruit taco over the tender, well seasoned carne asada tacos, which was also extraordinary.

The street corn was also another hit. The freshly shucked charred corn is topped with cotija cheese, poblano cream, some lime juice, a dash of tajin, and severed with a side of corn chips. It strikes a perfect chord with being perfectly sweet and salty, and the cheese and poblano cream adds a nice creamy element.

The delicious poblano cream is featured in many of Del Sur dishes and what a wonderful sauce it is. The sauce was featured on the shredded chicken tostadas, providing a great creamy contrast to the  well spiced chicken and fried corn tortilla.
