About

Namaste offers an array of certified gluten free products that are also free from the top 8 most common food allergens including wheat, dairy, peanuts, tree nuts, egg, soy, fish and shellfish. All products and mixes are vegan or can be made vegan friendly with egg substitutes.

Namaste also has a great culture. They are family-owned, women-operated, and they don't contract out to other companies to produce their products. They make everything themselves in their own facility which is free of all the top 8 allergens ensuring the safest environment for those with food allergies and sensitivities. Their products are also Kosher and USDA Organic. They really do care about delivering the best product for everyone to enjoy.

They have a great collection of products, including mixes and pasta dishes, but what caught my eye were the soup and cake cups. As someone who travels extensively I love easy to pack foods for work and personal travel. The cups can easily be thrown into my suitcase or purse and it "cooks" in it's own container.

Chicken Noodle Cup

The "chicken" noodle cup  is made with brown rice noodles, and like all their products, are free from the top 8 most common food allergens.

The soup cup is absolutely convenient and delicious. Just add hot water and let it sit for 5 minutes before digging into tasty soup. Since hot water is readily available at coffee shops or on the plane, I'm never too far away from a hot, delicious, safe meal.

The soup wasn't too salty, which can happen all too often with soups. The one cup was the perfect amount for a small meal, but make sure to have two if you're really hungry.

They also offer two other soup cups: hearty vegetable soup and broccoli and cheddar.

Cake Cup

Namaste offers cake cups in three flavors: yellow cake, dark chocolate, and cinnamon and sugar.

These cups are perfect to have around when you're fancying a dessert. Just add a 1/4 tablespoon of oil and 1/4 cup of any kind of milk.  Stir up the ingredients, pop it into the microwave for 90 seconds, and you have a yummy, fluffy cake. Feel free to top with whip cream, which I totally did.

The cake cups are not quite as easy to travel with as the soup cups since it requires oil and milk. However as a flight attendant I travel with a lunchbox for work and putting a small stash of oil in my lunchbox would be easy. I already travel with almond milk for protein shakes. If you ask the hotel restaurant for oil and milk they'll likely give it to you. I've been known to ask for an array of odd things during my hotel stays, including borrowing a bowl or asking for mayonnaise. You'll be surprised at how helpful and accommodating hotel staff can be. See full nutritional facts and purchase your own cake cups here.

Garbanzo Bean Flour aka Chickpea Flour

I love to cook foods inspired by my travels when I'm home. When I saw the garbanzo bean flour from Namaste I knew I had to try my hand at making socca, a "bread" dish that originated in Genoa, Italy (called farinata in this region) and gained popularity in Nice, France.

The ingredients to make this recipe are simple: garbanzo bean flour, warm water, oil, salt, and pepper. You can make it fancy and add herbs and/or grilled onions. I put fresh rosemary in mine and had it as a side with a spicy seafood pasta dish.

You can get the recipe I used here from the New York Times website.

Making the Socca

Picture
1) Preheat oven to 450 degrees. Whisk together garbanzo bean flour, water, and olive oil

2) Heat cast iron skillet in oven while the batter rests for at least 15 to 30 minutes. Pull heated pan out of oven, pour in 2 tablespoons of oil, swirl in the rosemary, then pour batter into pan and place back in oven.

3) Bake 12-15 minutes or until the edges are golden brown

Overall

I love Namaste cup products for it's convenience and all of their products for accommodating the majority of dietary restrictions. Their cups are easy to pack and "cook" and great to have on hand at home or for travel.

Their flour mixes are great for making world inspired food dishes and are reasonably priced.
